Sweet bread

INGREDIENTS

2 cups Flour

2 tsp Yeast

1 tbsp Baking Powder

4 tbsp room temperature Margarine

4 tbsp room temperature Shortening

1 cup Brown Sugar

¼ cup Raisins

¼ cup Currants

¼ cup Prunes

¼ cup Cherries or Mixed Fruits

1 cup Fresh Coconut grated

1 tbsp Ginger finely grated

1 tsp Cinnamon

1 tsp Nutmeg

1 tsp Mixed Essence Warm water for kneading White Sugar for sprinkling

½ cup Brown Sugar to mix with

½ cup Water

METHOD

1. Using your hand, in a large bowl mix flour, margarine, shortening together until crumbly

2. Mix in other ingredients together, using warm water to bring it to a sticky soft dough

3. Pour into 8 inch loaf pan and bake at 300 degrees for 40 mins until cooked at the center and golden brown or until toothpick comes out clean at center

4. In a small pan heat and mix brown sugar and water to make a syrup, brush unto the top of your sweet bread and sprinkle generously with white sugar. This is optional.
