Yield - Serves 3 persons

Ingredients

ï‚· Tomato - 1lb

ï‚· Onion – 2 tbsp

ï‚· Pimento Pepper – 4 peppers

ï‚· Garlic – 3 cloves (Crushed)

ï‚· Mustard Oil – 2 tbsp (substitute vegetable oil)

ï‚· Chadon Beni - 2 tbsp (finely chopped)

ï‚· Salt to taste

ï‚· Black Pepper - 1 tsp

ï‚· Brown Sugar - 1 tbsp

ï‚· Curry Powder - 1 tsp

ï‚· Mustard – 1 tsp

ï‚· Hot Pepper – 1

Method

ï‚· Over an open flame, roast whole tomatoes, onion and pimentos until outsides are charred. Cut into half inch pieces and set aside

ï‚· Place sauté pan on stove and allow to heat up

ï‚· When sauté pan is hot, add mustard oil, garlic and curry powder

ï‚· Stir for 5 minutes then add tomatoes, onion and pimentos

ï‚· Add black pepper, mustard, sugar, chadon beni and salt to taste and stir for 5 minutes

ï‚· Allow to cook for 15 minutes

ï‚· Take off heat

Note: This dish is typically served with Sada roti or coconut bake
