Conkies/Stew dumpling

One of Barbados traditional meals made in the month of November.

Recipe calls for

2 lbs. of cornmeal

1/4 cup of raisins (optional)

1 lb. of sweet potatoes

1 tsp allspice

2 cups of grated coconut

1 tsp nutmeg

1 tsp cinnamon

1 tsp salt

2 eggs (optional)

1 tsp vanilla essence

1 tsp almond essence

1/2 cup of flour

2 1/2 lbs. pumpkin

2 cups water

8 ozs. butter

1/4 cup coconut oil

2 lbs. sugar

1 cup milk (optional )

Banana leaves

Greater the pumpkin, potatoes, and coconut. Melt butter and coconut oil, beat eggs and set aside.

Cut banana leaves in squares, place over a heated stove on both sides.

Combine all ingredients in a large bowl blending together well. Put spoonful of mixture in square banana leaves, fold over well and place in a steamer over a pot of boiling water at median for 1 1/2 hours serve and enjoy.
