Tagine | Morocco

Ingredients:

  • 1 lb lamb or chicken, cut into pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp turmeric
  • 1/4 tsp ground black pepper
  • Salt to taste
  • 1/4 cup chopped dried apricots or prunes
  • 1/4 cup almonds
  • 1/4 cup raisins
  • 2 cups chicken broth or water
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large tagine pot or heavy saucepan over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the lamb or chicken pieces and brown on all sides.
  3. Stir in the ginger, cumin, cinnamon, turmeric, black pepper, and salt. Cook for 2-3 minutes until fragrant.
  4. Add the dried apricots or prunes, almonds, raisins, chicken broth, honey, and lemon juice.
  5. Cover and simmer for 45-60 minutes, until the meat is tender.
  6. Garnish with fresh cilantro and serve with couscous.
