Tagine | Morocco
Traditional African Culinary DelightsIngredients:
- 1 lb lamb or chicken, cut into pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp turmeric
- 1/4 tsp ground black pepper
- Salt to taste
- 1/4 cup chopped dried apricots or prunes
- 1/4 cup almonds
- 1/4 cup raisins
- 2 cups chicken broth or water
- 1 tbsp honey
- 1 tbsp lemon juice
- Fresh cilantro, chopped (for garnish)
Instructions:
- Heat the olive oil in a large tagine pot or heavy saucepan over medium heat. Add the onion and garlic, and sauté until softened.
- Add the lamb or chicken pieces and brown on all sides.
- Stir in the ginger, cumin, cinnamon, turmeric, black pepper, and salt. Cook for 2-3 minutes until fragrant.
- Add the dried apricots or prunes, almonds, raisins, chicken broth, honey, and lemon juice.
- Cover and simmer for 45-60 minutes, until the meat is tender.
- Garnish with fresh cilantro and serve with couscous.
