Bunny Chow | South Africa

Ingredients:

  • 1 loaf of bread (unsliced, white or whole wheat)
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, minced
  • 1-2 green chilies, chopped
  • 1 lb chicken, beef, or lamb, cut into cubes
  • 2 tbsp curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 2 tomatoes, chopped
  • 1/2 cup water or chicken broth
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, and green chilies, and sauté until softened.
  2. Add the meat and brown on all sides.
  3. Stir in the curry powder, coriander, cumin, turmeric, and salt. Cook for 2-3 minutes until fragrant.
  4. Add the tomatoes and cook until they soften.
  5. Pour in the water or chicken broth, and simmer for 20-30 minutes, until the meat is cooked and the sauce thickens.
  6. Cut the loaf of bread into quarters and hollow out the inside, creating a "bowl."
  7. Fill each bread bowl with the curry and garnish with fresh cilantro.
