Traditional African Culinary DelightsIngredients:
- 1 loaf of bread (unsliced, white or whole wheat)
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, minced
- 1-2 green chilies, chopped
- 1 lb chicken, beef, or lamb, cut into cubes
- 2 tbsp curry powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 2 tomatoes, chopped
- 1/2 cup water or chicken broth
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, and green chilies, and sauté until softened.
- Add the meat and brown on all sides.
- Stir in the curry powder, coriander, cumin, turmeric, and salt. Cook for 2-3 minutes until fragrant.
- Add the tomatoes and cook until they soften.
- Pour in the water or chicken broth, and simmer for 20-30 minutes, until the meat is cooked and the sauce thickens.
- Cut the loaf of bread into quarters and hollow out the inside, creating a "bowl."
- Fill each bread bowl with the curry and garnish with fresh cilantro.
