Flying Fish and Cou-Cou | Barbados
Traditional Caribbean Culinary DelightsCou-Cou Ingredients:
- 1 cup cornmeal
- 4 cups water
- 1/4 tsp salt
- 1 small onion, chopped
- 1 tbsp butter
- 1 okra, sliced (optional)
Flying Fish Ingredients:
- 6 flying fish fillets
- 1 lime, juiced
- Salt and pepper to taste
- 1 tbsp Bajan seasoning (or a mix of thyme, garlic, and pepper)
- 1/4 cup flour
- 2 tbsp vegetable oil
Cou-Cou Instructions:
- In a saucepan, bring water to a boil and add salt and sliced okra (if using).
- Gradually stir in the cornmeal, whisking to avoid lumps.
- Reduce the heat to low and cook, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
- Stir in the chopped onion and butter. Cook for another 5 minutes.
- Remove from heat and set aside.
Flying Fish Instructions:
- Rinse the fish fillets with lime juice and water, then pat dry.
- Season the fillets with salt, pepper, and Bajan seasoning.
- Lightly coat each fillet with flour.
- Heat the oil in a frying pan over medium heat. Fry the fillets for 2-3 minutes on each side, until golden brown.
- Serve the flying fish over the cou-cou.
