Conch Fritters | Bahamas & Dominica

Ingredients:

  • 1 lb conch meat, cleaned and finely chopped
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/2 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1-2 scallions, finely chopped
  • Vegetable oil for frying

Instructions:

  1. In a large bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper (if using).
  2. Stir in the beaten egg and milk to form a batter.
  3. Add the chopped conch, onion, bell pepper, and scallions to the batter. Mix well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Drop spoonfuls of the batter into the hot oil, frying until golden brown on all sides, about 3-4 minutes per side.
  6. Drain on paper towels and serve with a dipping sauce like tartar or a spicy aioli.
