Goat Water | Montserrat
Traditional Caribbean Culinary DelightsIngredients:
- 2 lbs goat meat, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, minced
- 1 scotch bonnet pepper, chopped (optional)
- 2 tomatoes, chopped
- 2 carrots, sliced
- 2 potatoes, peeled and cubed
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 2 cups beef broth or water
- Salt and pepper to taste
- Juice of 1 lime
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, and scotch bonnet pepper, and sauté until softened.
- Add the goat meat to the pot and brown on all sides.
- Stir in the tomatoes, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Add the carrots and potatoes, and pour in the broth or water.
- Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, until the goat is tender.
- Adjust the seasoning with lime juice, salt, and pepper.
- Serve hot, traditionally with bread or dumplings.
