Goat Water | Montserrat

Ingredients:

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 1 scotch bonnet pepper, chopped (optional)
  • 2 tomatoes, chopped
  • 2 carrots, sliced
  • 2 potatoes, peeled and cubed
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 2 cups beef broth or water
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, and scotch bonnet pepper, and sauté until softened.
  2. Add the goat meat to the pot and brown on all sides.
  3. Stir in the tomatoes, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Add the carrots and potatoes, and pour in the broth or water.
  5. Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours, until the goat is tender.
  6. Adjust the seasoning with lime juice, salt, and pepper.
  7. Serve hot, traditionally with bread or dumplings.
