Fried Bakes and Saltfish

- 2 cups all-purpose flour

Saltfish Recipe
Ingredients:
- 1 lb saltfish (salted cod)
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1-2 Scotch bonnet peppers (optional, for heat), chopped
- 2 tomatoes, chopped
- 2-3 sprigs of fresh thyme
- 1/4 cup vegetable oil
- 1/4 tsp black pepper
- 1/4 tsp paprika (optional)
- 1 lime or lemon (optional, for soaking the fish)

Prepare the Saltfish:
- Rinse the saltfish to remove excess salt. Soak it in cold water for a few hours or overnight, changing the water a couple of times to remove most of the salt. You can also boil the saltfish for 10-15 minutes to speed up the process, then drain and rinse.
- Once desalted, flake the fish into small pieces, removing any bones and skin.

Sauté the Vegetables:
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion, garlic, bell pepper, and Scotch bonnet pepper (if using). Sauté until the vegetables are softened.
